This was really the discovery of the summer: yogurt and berry popsicles (without an ice cream maker)
Maybe it’s not correct to call them popsicles (which are made of fruit juices and water) because in terms of consistency they are very similar to soft ice cream. The preparation is very simple and the success is guaranteed because they are very fresh and delicious!
To have an optimal result I recommend using silicone molds for ice cream and popsicles, where you can insert the stick. Otherwise you can make a preparation like an ice cream cake to cut (and any mold will do!)
Ingredients (for 4 ice creams/popsicles)
- 2 packages of Greek yogurt (about 170 gr) – not the normal one!
- 1 package of fresh raspberries or berries or mix of berries
- 60 gr of icing sugar
- 3 tablespoons of liquid honey (acacia)
- 2-3 tablespoons of brown sugar.
Gently wash the raspberries and place them in a pan with the brown sugar and heat over low heat until the sugar has completely dissolved and a syrupy mixture has formed with the raspberries inside. Let it cool completely.
In a separate bowl, mix the yogurt with the sugar and honey until you get a smooth mixture. If you like, add a little vanilla pod scrapings.
Take the mold for the sticks and pour the raspberries with the syrup here and there, leaving empty spaces. Then fill the mold with the yogurt mixture and on the surface put a little more raspberry mixture … in a leopard spot.
Insert the stick and put in the freezer for at least 3-4 hours. Beautiful, right? You won’t be able to resist!
Try to indulge yourself with all the berries!
