In the summer we go in search of fresh desserts with a spoon, and so the time has come to revisit the classic recipes to make them fresher and more appetizing even when the temperatures rise. So why not make the classic tiramisu fresher and more fragrant? There are many variations, but I propose this Strawberry and Berries Tiramisu because it is truly fragrant and delicious and I have been preparing it for years and wherever I take it it is an unparalleled success. And since it is easy-good-fast, I put it on Foodmetender!
Ingredients:
- 250 g mascarpone
- 150 g egg yolk (about 10-11 yolks)
- 180 g sugar
- 500 ml fresh whipping cream
- 3 sheets gelatine
- Ladyfingers (don’t buy the dry ones! I recommend Sardinian pistoccheddos, or make the ladyfingers yourself… it’s very easy)
- 3 oranges
- 2 tubs of strawberries, 2 tubs of raspberries, one tub of blueberries, 2 tubs of blackberries
- a few basil leaves and a few fresh mint leaves.

First choose the most beautiful fruits and set them aside in sufficient quantities to decorate your tiramisu. Wash and cut the rest of the fruit, put it in a large bowl and season with the juice of an orange, plenty of sugar and the mint and basil leaves. Leave to flavour while you prepare the cream for the dessert.
Soak the gelatine for ten minutes in cold water. Then squeeze it well.
Put 20 ml of cream (about a finger) on low heat and add the gelatine. Leave on the heat until it has completely dissolved and the solution is uniform. Let it cool for 10 min.
Meanwhile, beat the eggs with the sugar using an electric whisk until the mixture becomes light and frothy (it should “write”).
Add the mascarpone, a little at a time, stirring with a wooden spoon.
Slowly add the gelatine dissolved in the liquid cream.
Whip the cream and incorporate it into the mixture, stirring gently from top to bottom until the mixture is smooth. The cream is done, put it in the fridge for 20 minutes, or use it immediately.
Extract the orange juice and filter it with a strainer. Add the strawberry and berry juice to the orange juice, adjust the sugar and soak the ladyfingers with this syrup.
Place the ladyfingers on a baking tray with a diameter of about 20 cm (if you want more, multiply the doses) and cover with some berries and finally with the cream. Repeat this operation to obtain two nice layers (I recommend not to make too many layers but to be generous with fruit and cream, make a layer of at least 2 fingers, you will see how bomb!
Refrigerate for at least 2 hours before serving. If you are in a hurry, put it in the freezer for 40 minutes and then refrigerate.
When ready to serve, add the remaining fruit and decorate with basil/mint leaves and some meringue.
Finally, sit down and enjoy this very fresh summer tiramisu!
