Who hasn’t loved Mister Day Donuts (paradise cake)? Yes yes the very soft ones with icing sugar that melt in your mouth that are so good… here are those. Here is finally a recipe to reproduce them at home for a very sweet and spring breakfast.
The process is simple, don’t be afraid.
Ingredients (8 donuts)
- 135 g of soft butter
- 125 g of icing sugar
- 80 g of 00 flour
- 65 g of potato starch
- 65 g of whole eggs (1 large egg)
- 45 g of egg yolks (there are 2 medium egg yolks)
- 2 g of lemon zest
- 2 g of baking powder
- 1 vanilla pod or vanilla flavouring
- 1 pinch of salt
Whip the butter with the icing sugar with an electric whisk or in a stand mixer (leaf attachment) until you obtain a creamy mixture, add the vanilla seeds and lemon zest, continuing to whisk. Add the eggs, egg yolks and salt a little at a time, always whipping at low speed until the eggs are well absorbed and the mixture is compact and fluffy. Mix the flours and yeast and add it, constantly whisking, a spoonful at a time to the dough. If it becomes too thick, add a spoonful of water.
Butter and flour the donut molds (smooth or fluted) or domed ones and fill with the dough using a spoon, filling them up to one cm below the edge (they rise a little). Bake in a hot form at 170°C for 15-20 minutes until they are cooked to the toothpick test, but do not let them darken.
Remove them from the oven and let them cool for 10 minutes in the mould, then carefully remove from the mold and sprinkle with icing sugar.
