This recipe comes from the famous Italian cook book “The Silver Spoon” and is a new and tasty way to eat broccoli. It is also very pleasant to look at so you can also think about preparing it for a dinner with friends and relatives.
Ingredients:
- 2 green broccoli (Sicilian broccoli)
- 2 eggs
- 2 teaspoons of desalted capers
- 2 fresh chillies
- 2 tablespoons flaked almonds or coarsely chopped almonds
- milk
- 8-10 slices of homemade bread
- oil, salt and pepper to taste
- oregano and other dried herbs
Clean the broccoli and separate them into florets. Boil them in salted water and blanch them so that they are cooked but still al dente. Drain them and pass them for a few minutes in cold water to stop the cooking and drain.
In the meantime, take the slices of bread and remove the crust by cutting with a knife. Take two slices of bread and crumble them coarsely and season them in a pan with oil and chilli pepper until they are nice and crunchy, add the capers and almonds and mix well, leaving to flavour.
In a large bowl, beat the eggs with a fork with a little milk, add a little salt and a little oregano and other dried herbs to your liking. dip the slices of bread in this mixture and then place them in the bottom of the baking dish, previously greased lightly with olive oil, until they form an even layer.
Assembly: place the broccoli, add a drizzle of oil and season with salt and pepper. Finally, add an even layer on top of the bread and sprinkle with the mixture of crunchy bread, capers and almonds.
Bake at 180°C for 10 minutes and then pass under the hot grill for a few minutes.
