ROMAN-STYLE WINE DONUTS (COOKIES)

Who said that making a stratospheric cookie requires so many steps, equipment and precision? Wine donuts, a classic traditional Roman cookie, are among the simplest biscuits to make and are so good that it’s really hard to resist… and you can make 50, 100 or 1000 and they will all be eaten, right down to the last crumb!

Ingredients

  • 100g of red wine
  • 100 g of seed oil
  • 100g of granulated sugar
  • 360 g of 00 flour
  • 1 teaspoon of yeast
  • 1 pinch of salt
  • a pinch of star anise (optional)
  • granulated sugar to coat the donuts to taste.

Make a well with the flour and yeast and incorporate the other ingredients, pouring them into the center and mixing them a little at a time with a fork until they form a soft and elastic dough, like shortcrust pastry. If you have a planetary mixer, add all the ingredients and mix with a paddle attachment until you obtain a soft and elastic consistency.

Mix the dough quickly and spread it on the surface. By hand, form sausages 1.5 cm wide and shape into donuts (alternatively roll out the dough to a thickness of 1.5-2 cm and cut out donuts with a diameter of 6-7 cm.

Gently roll the donuts  in granulated sugar and place them spaced apart on a baking tray. Bake at 180°C for about 15-18 minutes until golden. Let cool and serve. They can be stored for several days in an airtight jar.

If you want to do something really special with part of the dough, make “very thin” donuts, working the dough to form a sausage with a diameter of 0.5 cm and creating thin donuts. Proceed with the following steps and cook in the oven (it will take a few minutes less). It’s more laborious but the result is CRAZY.

Variants:

– You can use granulated sugar mixed with a spoonful of cinnamon to cover the donuts, they will be even more fragrant

– You can add a spoonful of cocoa to the dough, to have donuts with a more intense colour.
