This roast pork with apple and plums is a recipe that my mother shows off at the most important dinners.
Making it is pretty easy.
Ingredients:
Roast pork;
Dried plums;
3 golden apples;
Rosemary;
Thyme;
Brandy;
White wine;
Honey;
Pepper;
Vegetable broth
Carve the roast by inserting the dried plums inside (remove the stone). Tie it with kitchen twine.
Fill a glass with 1/3 water, 1/3 Brandy, 1/3 white wine. Add pepper, salt, thyme and rosemary and honey. Let it macerate.
Heat the oven to 180° and start cooking the roast, basting it occasionally with the preparation. The roast should cook for a good hour (you can check by cutting the meat with a knife).
Let’s prepare the apple sauce: cut the apples into cubes. Cook some garlic and rosemary in a saucepan with a drop of oil. Add the apples and pepper. Add some vegetable broth.
Cook until the apples have broken down forming a puree. Do not add too much broth, the sauce must be compact.
Cut the roast, moisten it with its sauce (you don’t have to let it all evaporate!) and add the apple sauce!
