TIRAMISU’ IN A MERINGUE DOME

It was one of the most interesting desserts of the year and being able to reproduce it at home was truly a great satisfaction. Served as it should be served, too!
The Tiramisu in a meringue dome might seem simple, but in reality it requires a certain mastery, especially in handling a very thin layer of meringue. And if it came out of the expert hands of Chef Di Giacinto, rest assured that it is not that easy…
In any case, here is our home version:

Meringue domes

Ingredients:

  • 5 cold egg whites
  • 450-500 g of sugar (Eridania Zefiro is ideal)
  • silicone mold in the shape of hemispheres
  • bitter cocoa

Using an electric whisk, start whipping the egg whites. When they start to become firm, add, little by little, all the sugar, continuing to beat with the whisks vigorously. The egg whites will whip until stiff and will take on a very white, shiny and very firm appearance (it must not run but must remain almost eagle-beak-shaped when you lift the whisks).

Wash the silicone hemisphere mold well and dry it carefully. Using a spoon, cover the inside of the spheres with a thin layer of meringue. The dome will swell a little during cooking so you can make a really thin layer.

Bake at 90°C for at least an hour (but the time may vary from oven to oven) in a fan oven, keeping an eye on your domes. When they are solid to the touch, try to detach them very delicately, without breaking them. If they are still soft, put them back in the oven and wait until they are well cooked, but they must not color. You will see that at a certain point the edges will detach from the mold. To remove them, try to gently widen the silicone on the edges and “slide” the dome to make it come out, this is the best method.

At this point, delicately fill your dome with the tiramisu, using a spoon and trying to balance the cream part with the ladyfingers and to place the latter at the base.

Gently place the filled dome on the plate and sprinkle with bitter cocoa and serve. Your guests will be amazed!
