LIGHT CRANBERRY BISCUITS

I was looking for new cookie recipes (in August, I know, it’s crazy) and I came across this different recipe, these cranberry cookies. Re-milled semolina instead of 00 flour, half the butter that usually goes in a shortcrust pastry and with a touch of fruit. The result is a light, crunchy and fruity cookie, to try for a “guilt-free” breakfast.

Ingredients:

  • 200 gr of re-ground semolina
  • 60 gr of butter
  • 2 eggs
  • 40 gr of granulated sugar (increase to 50 if you prefer a sweeter taste)
  • 30 gr of raw cane sugar
  • 1 tablespoon of vanilla seeds (or vanilla flavoring)
  • the grated zest of half a lemon
  • 50 gr of dried cranberries

Mix the semolina, vanilla and sugar in a bowl and mix, add the butter in pieces and “crumble” it with your hands until you obtain a sandy mixture (or, if you have a stand mixer, put the ingredients with the leaf hook and mix until you obtain a sandy mixture).

Add the 2 eggs and continue mixing and then finally the crumbled cranberries. If it is a bit sticky add a little semolina until you get a soft and elastic dough. Put it covered in the fridge for half an hour.

Take out the dough and, on a surface covered with a thin layer of semolina, roll it out with a rolling pin and cut out biscuits with cookie cutters of the shapes you prefer (thickness of 0.5 cm) and arrange the biscuits on a baking sheet covered with baking paper, well spaced apart. If you have the time, I recommend keeping the baking sheets in the fridge for 30 minutes before baking, the biscuits will keep their shape better.

Bake at 170°C and cook for about 12-15 minutes. Around 10-12 minutes, check the cooking to take them out at the right time (it always depends on the oven), they should be taken out when the edges start to brown just a little to obtain a slightly crunchy effect.

If you prefer a softer consistency, take them out before the edges brown. Let them cool before removing them from the baking sheet.

They can be kept for several days in a well-closed tin.
