Here we present the recipe for Lemon Meltaways, delicious lemon-flavored shortcrust biscuits, perfect for a tea or as a small gift. Lemon meltaways are unforgettable biscuits, with a delicate and fresh taste and given the type of shortcrust pastry without eggs and with cornstarch… they literally melt in your mouth!

Ingredients:

  • 160 g of soft butter
  • 125 g of icing sugar
  • 1 vanilla pod
  • the grated zest of two lemons
  • 2 tablespoons of lemon juice
  • 260 g of 00 flour
  • 20 g of cornstarch
  • 1 pinch of salt
  • icing sugar for decorating

Pour the butter into the mixer or knead by hand with the sugar, lemon zest and vanilla seeds and work everything until you obtain a soft cream. Then add the lemon juice and salt and mix gently. Add the sifted flour together with the cornstarch and work quickly until all the ingredients are well combined (don’t work it too much, please!).

Form the dough into a loaf from which you will obtain 4 cylinders of about 3-4 cm in diameter, wrap them in baking paper or aluminum foil and let them rest in the refrigerator all night (or in the freezer for 1 hour).

Preheat the oven to 180°C, cut out from the still cold dough many rounds of about 1 cm thick or a little more, place them on a baking tray covered with baking paper and cook for 12 minutes (they must not brown, they must remain white white).

Once cooked, remove them from the oven and let them cool slightly until they are firm enough to handle, then roll them in the icing sugar while still warm and let them cool on a wire rack. Here are your Lemon Meltaways, ready for your tea… aren’t they delicious?
