Krumiri: it is pure LOVE. Good as only simple things can be.
It’s impossible not to remember the extraordinary Bistefani advertisement from the 80s with Renzo Rinaldi saying “But who am I Santa Claus?”.
These biscuits are also part of the history of Italy: invented in 1878 in Casal Monferrato by the pastry chef Domenico Rossi, they are said to have taken their characteristic shape in honor of the “mustache” of King Vittorio Emanuele II. And it seems that the name comes from the “krumiro” liqueur that Domenico Rossi used to drink at Caffè Concordia. The original recipe is obviously top secret, but on FoodMeTender you will find the one that we have found to be the best so far. What are you waiting for to make them at home?
Ingredients:
- 175 g of Fioretto corn flour (the very fine one)
- 150 g of soft butter
- 75 g of icing sugar
- 75 g of 00 flour
- 2 egg yolks (about 40 g)
- vanilla scraped from the pod
- a pinch of salt
First, carefully mix the eggs, butter, icing sugar and vanilla in the bowl of a stand mixer or in a large bowl if working by hand.
When they are well blended, add the flours and the pinch of salt mixed together, a little at a time, and work the dough until you obtain a soft and elastic dough which you will leave to rest in a cool place for 20-30 minutes.
At that point, if you have a machine for making homemade pasta with a star nozzle, you can proceed with that or with the biscuit maker, otherwise work the pasta into sausages with a diameter of 1.5 cm and cut out little loaves about 10 cm long.
Place them on the baking tray lined with baking paper and “scratch” them by passing the tines of the fork over them. Then fold them to make a “moustache”.
If you have a meat grinder (hand or electric) and a star mold you can make Krumiri with their classic shape, they will be even more beautiful! Note: even though the dough is soft, I found it difficult to make them with the piping bag with the star tip, but with the meat grinder you’re on the safe side!
Bake at 200°C for about 10-15 minutes, without letting them brown too much. Remove from the oven and leave to cool completely, they are quite fragile.
And here are your krumiri, taste one and you will see that you will think…”I didn’t think they could be so good”!
