These honey and hazelnut biscuits are really easy to make and so so good … that I end up making them every Christmas!
The recipe was given to me by the legendary ZiaIrene who in turn had it from a true authority on Italian sweets Pinella, whose wonderful desserts you can find on her beautiful blog.
Ingredients:
- 200 g of 00 flour
- 70 g of hazelnuts
- 50 g of sugar
- 25 g of acacia honey
- 100 g of soft butter
- 1/2 teaspoon of cinnamon
- 1 pinch of salt
Toast the hazelnuts (in the oven or in a pan) for 15 minutes and then chop them finely in the mixer.
Knead all the ingredients together with your hands to obtain a soft and elastic dough (shortcrust pastry). Form a ball and flour it and leave to rest for 30 minutes in a cool place wrapped in a cloth or in cling film.
At this point, roll out the dough with a rolling pin on a floured surface and cut out the biscuits with your favorite cookie cutters (I suggest small sizes).
Cook them in a fan oven for 12-15 minutes at 180°C. Be careful not to overcook them, they will lose their softness.
Once cooked, while they are still hot, gently turn them in the granulated sugar… and voilà, here are your hazelnut and honey biscuits!
