I had been looking for new recipes for Christmas cookies for a long time… but also for non-Christmas cookies now that I think about it 🙂 And finally I came across these extraordinary cookies (from a modified recipe by Miette from San Francisco), which really fulfilled a desire of mine given my love for salted chocolate.

And here they are for you, the very easy and very successful Salted chocolate sablèe biscuits, which, after the chocolate, will leave you with a delicious hint of salt.

Ingredients:

  • 110g soft butter
  • 160g sugar
  • 130-140g flour
  • 60g cocoa
  • 14g baking powder
  • a pinch of a teaspoon of vanilla extract (from the pod…don’t cheat!)
  • half a teaspoon of salt (maldon, fleur de sel, hymalaya, grey salt)
  • 100g dark chocolate (minimum 60%)

Bring the butter and sugar together quickly until you get a nice soft dough.
Sift the flour with the baking powder and cocoa.
Gradually incorporate the vanilla, flour with the baking powder and cocoa into the butter and sugar mixture until you get a smooth dough.

Separately, melt the chocolate cut into small pieces in a bain-marie (I always recommend using a knife) until it is perfectly liquid.
Remove from the heat and let it cool slightly.
Incorporate the melted chocolate into the mixture and finally add the salt, a little at a time, mixing well and tasting until you find the sweet-savory balance that you like (for us it is about 6 pinches … but to each his own!). Wrap the pastry dough in cling film and let it rest for about 30 minutes.

Take small (but really small) portions of dough and form balls that you will place, well spaced (they grow quite a lot) on a baking tray covered with paper.

Bake at 170 °C for about 10-12 minutes until they are cooked at the base without browning. They will have some cracks, but this is absolutely normal.

I RECOMMEND that you let them cool completely before moving them from the pan: when hot they are only very delicate (Sigh)

And here are the chocolate salted sablèe… unforgettable!
