And it is from the Talisman that this simple but magnificent recipe for fried carnival pancakes comes, the best that you will ever taste. Ancient recipes that are beautiful to bring to light and spread, because they bring joy and tradition to many new homes.
Ingredients for 6 people
- 500 g of 00 flour
- 200 g of milk
- 120 g of granulated sugar
- 30 g of butter
- 2 eggs
- grated zest of 1 lemon
- 1 sachet of vanilla yeast
- 1 pinch of salt
- Seed oil for frying (better if peanut)
- Icing sugar for covering
In a bowl, put the soft butter cut into pieces and the sugar and work them with a spatula until they are soft and smooth. Add the eggs, the grated lemon zest and mix and then add a little at a time the flour in which you have previously mixed the yeast and the pinch of salt. Work the dough with the spatula and in the meantime add the milk until it is completely incorporated to obtain a smooth mixture without lumps.
At this point, put a tall, narrow saucepan with a heavy bottom on the stove, pour in plenty of oil and when it is very hot, pour in a little of the mixture with a teaspoon and slide it (help yourself with another spoon) into the boiling oil. Repeat the operation for more fritters, depending on how many fit comfortably in your pan. Cook the fritters until they are golden on all sides, remove them with a slotted spoon and drain them then place them on absorbent paper.
Once they are all cooked, sprinkle them with powdered sugar and serve immediately. They are DELICIOUS right away! What are you waiting for?
