CANTUCCI BISCUITS WITH ALMOND AND CHOCOLATE

These “Cantucci” or “Tozzetti” biscuits with almonds and chocolate are out of this world, perfect for the end of a meal, but also for breakfast or a snack.

The recipe was given to me by a very kind person at a difficult time in my life and I am still very grateful for it. And now… let’s begin, the Cantucci are one after another!

Ingredients (for approximately 40-50 pieces)

  • 220 g of butter
  • 350 g of type 1 flour
  • 125 g of dark chocolate cut into thin flakes
  • 125 g of almonds with skin, roughly chopped
  • 125 g of icing sugar
  • 125 g of granulated sugar
  • 1 tablespoon of Rum
  • 1 vial of almond flavoring
  • 1 egg
  • 1 egg yolk

Cut the butter into small pieces and place it in the planetary mixer and beat it with the egg, the yolk and the sugars (icing and granulated), the rum and the almond flavoring until you obtain a homogeneous mixture.

Add the flour a little at a time and mix.

Finally, add the dark chocolate and chopped almonds and mix the mixture well. Make 4 loaves with a diameter of about 5 cm, lightly flour them and let them rest in the fridge for 20 minutes.

Bake at 180°C until you see the dough color on the edges.

Leave to cool and then, with a sharp knife, cut the biscuits transversally, a little obliquely, to obtain the pieces.

Place them on the baking tray with the cut side facing up and put them back in the oven at 180°C for another 5 minutes, to make them slightly crispy on the outside.
